Yankee Gardener Recipes
Italian Garden Chicken Soup with Ravioli
Serves 6 to 8.
2 small zucchini squash, from your vegetable garden, diced.
1 large carrot, from your vegetable garden, diced.
1 medium green bell pepper, from your vegetable garden, diced.
1 medium onion, from your vegetable garden, chopped.
3 large cloves of garlic, from your vegetable garden, chopped.
2 teaspoons dried basil.
1 teaspoon fennel seed.
1/4 teaspoon dried crushed red pepper.
2 tablespoons olive oil.
6 cups chicken broth, home made or low salt, canned.
1 9 to 12 ounce package fresh cheese ravioli.
1 1/2 cups cooked chicken, diced.
Salt, plain or iodized, to taste.
Freshly ground pepper, to taste.
Bowl filled with freshly grated Parmesan cheese.
- Heat olive oil in a dutch oven or heavy large saucepan over medium heat. Add the bell pepper, onion, garlic, basil, fennel seeds and crushed red pepper. Cook the garden vegetables until they are just tender, about 10 to 12 minutes.
- Add the chicken broth. Cover pot and simmer for 10 minutes.
- Add the zucchini and carrot. Cover and simmer until carrot is almost tender, about 5 minutes.
- Increase heat to high and bring soup to boil.
- Add ravioli and boil until tender, about 5 minutes.
- Turn down the heat, and add the diced cooked chicken.
- Cook the diced chicken until heated through, about 1 minute.
- Season the finished chicken soup with salt and pepper to taste.
Ladle this delicious fresh chicken soup into the waiting bowls. Serve and enjoy...!
Pass around the bowl of freshly grated Parmesan cheese.
